Day Forty Four - Walking dead

Not sure what was going on today but everyone in my kitchen seemed to be out of sync ...  guys who normally have it all together were all over the place! As for me ... I woke around 4 a.m. and couldn’t get back to sleep so decided to finish my blog post and add a cookbook one ... I fell back asleep eventually but woke up feeling like crap and over heated! I got into the kitchen around 8:30 a.m. but felt like I was in the twilight zone ... having to work on beef kidney definitely didn’t help ... the morning is a bit of a blur and all some of us managed to get out was our potatoes (colcannon) the pies were still cooking by the time lunch came around ... we’ll finish them on Thursday aparently! As I didn’t want to not present anything ... I had a bit of a laugh and put some colcannon on a plate with a spring of parsley! Classy! 😂

This week I am in kitchen 2 again and I have Gary as a teacher ... Gary prides himself on marking hard so this will be fun 😂 I also have a new partner ... Máire ... one of the bread belles (the name we give to a group of the girls obsessed with making Sourdough) so I’m hoping she encourages me to make my sourdough starter this week! 😝

The afternoon demo this afternoon was with Rory and had a focus on South East Asian food ... I wasn’t feeling great during it so I left around 4pm ... here’s the list of what was made 

  • Vietnamese Rice Paper Rolls, Shrimp, Fresh Herbs and Dipping Sauce
  • Spring Rolls, Thai Dipping Sauce
  • Spring Rolls, Sweet and Sour Dipping Sauce
  • Crispy Fried Wontons, Sweet and Sour Dipping Sauce
  • Son’s Spring Rolls with Vietnamese Dipping Sauce
  • Shermin’s Thai Chicken Curry
  • Basmati Rice
  • Thai Red Chicken Curry
  • Asian Pickled Vegetables
  • Beef Rendang
  • Thai Fragrant Rice
  • Rustic Peach Tart, Summer Berries
  • Raspberry Ice-Cream; Strawberry Ice-Cream, Strawberry Sauce
  • Raspberry and Beetroot Ice-Cream
  • Thai Coconut Sorbet with Pineapple and Mint

As I mentioned I left demo at 4 p.m. (so limited photos) and conked out at home until around 7:30 p.m. hopefully some paracetamol and berroca will sort me out for tomorrow ... 

Tomorrow is a non cooking day and we have our second class with Blathnaid Bergin on "the business of food!"
