Day Twenty Four - The business of food

A normal start this morning ... 9 a.m. and it was classroom all day ... as I mentioned yesterday the course was given by Blathnaid Bergin (Darina Allen's sister). Blathnaid runs the business of food (http://thebusinessoffood.ie) and offers courses and consulting for the restaurant business!

The day (we will do another also in a few weeks) entitled "Cooking for Pleasure and Profit" was focused on operations management and designed to give us a 'taster' of setting up a food service or catering business, Menu Planning, kitchen management with some case studies of real businesses thrown in for good measure! A lot of the information is transferable from the finance world and not breaking news (SOPs etc) but it was interesting to have a focused session on cafe / resto setup and some of the relevent facts and figures and it’s clear there is a lot of information to consider! πŸ˜‡

Late afternoon we had a meeting on front of house for the pop up ... The theme will be Bloomsday at Ballymaloe as it will actually be held on Bloomsday (16th June) ... I am charged with arranging the entertainment for the evening ... so any of my friends who are good musicians ... call me πŸ€™ 

Tonight the normal wine tasting took place without me as I wasn't feeling well at all ... gutted to miss it as it is in a cottage overlooking the sea in Ballycotton πŸ€’... hope I am better tomorrow! 

Tomorrow I am making ... Cannellini Bean Salad, Chilli Salsa, Chocolate & Raspberry Eclairs, White Yeast Bread! So I finally come face to face with my nemesis ... Hello Mr. Choux Pastry!!! πŸ˜±πŸ‘Ή

Also up for salad duty at 7:30 a.m., Joy πŸ˜’πŸ˜Β
