And so begins week four ... it's crazy how quickly it seems to be going ... I had read about the speed at which time passes in other blogs but seeing it now ... it really is a phenomenon! It seems like yesterday that I arrived and was just finding my feet, now everyone seems comfortable in their surroundings and you would think they were here months!

Today I was in the kitchen for 8 a.m. as usual and got a good start on the morning ... I was making ...

  • Victoria Sponge
  • Pureed Swede Turnips with olive oil and parmesan
  • Spiced roast potatoes
  • Brown Yeast bread

I didn't really feel myself this morning (for obvious reasons 😂) but I did some of my best cooking and getting my highest mark of the course so far ... maybe there's something to that!😜 I managed to get back to the cottage for a shower at lunch as I had no lunch time duty today!

And ... No bread disaster ... almost a perfect loaf ! 🤫

The Afternoon demo focused on a few different type of dishes ... Cakes by Pam and the rest with Darina!

  • French Onion Soup with Gruyère Toasts
  • Oaxacan Chicken Broth with accompaniments
  • Vietnamese Chicken Salad with Prawn Crackers
  • Mexican Chilaquiles Verdes o Rojos
  • Roast Chicken and Couscous Salad with Pomegranate Seeds and Pistachio Nuts
  • Chicken Salad with Mango and Roast Cashew Nuts
  • Melted Green Onions with Thyme Leaves
  • Spring Green Salad with Vino Cotto Dressing
  • Chocolate Cake with Chocolate Wafers
  • Coffee Cake with Chocolate Coffee Beans
  • Aunt Florence’s Orange Cake with Candied Orange Peel
  • Lemon Curd Cake

It was announced that tomorrow there is a cake competition ... but as I did a cake today (a very good one 😇, my partner (Jan the Dutchman!) has to make one and I do the rest. I would have liked to have taken part but ... hey ho that's life! Tomorrow I am making ...

  • Vietnamese Chicken Salad with Prawn Crackers
  • French Onion Soup with Gruyère Toasts
  • White Yeast Bread

I might try making scones also but we'll see how time is tomorrow ...

This evening we had our first meeting for the pop up event we will hold on 16th June! Basically each 12 week course sets up a restaurant for an evening and we run it for the night! Apparently they are always a great success ... so no pressure! If you want tickets for it let me know asap! They will sell out as soon as they are advertised.👍
